I’m not a huge pumpkin pie fan either, but I’d still eat the stuff. For the past few years, I always get requests to make the Cook’s Illustrated version (via Smitten Kitchen), which includes maple syrup, candied yams, and lots of straining. It’s definitely a step up from the back-of-the-can recipe and those [shudder] store bought ones in the plastic container. But it’s still pumpkin pie…

In reply to Erin Day. Absolutely! The crust is really delightful, so I like the ratio of crust to filling in these smaller ones. But it should definitely work in a tart or pie pan. Or a slew of ramekins! I've also thought about trying it more as a pudding with a crust crumbled on the top just before serving. Let me know how yours goes!

I need to find the time to make these! They are so adorable and I still keep trying to like pumpkin pie (and failing) maybe these will finally do it.
